Well as you know tamales are very delicious but, what is the history behind them? Tamales originated in Mesoamerica which can be traced back as far as 8000 BCE. The Aztec and Mayan civilizations often brought their armies tamales before battles. Tamales are made from a nixtamalized corn starch which in Latin America is referred to as “masa.”Tamales can be filled in with about everything. They can be filled in with beans, chicken, pork, cheese, sauce, deer, and a combo of all of them. Tacos also a mobile food used by the Spanish for their conquest of countries and civilizations. Tacos is a standard dish to make you start with a tortilla however you want it either grilled or fried then, you go one to put some type of meat, fish, beans, rice, or even insects in some cultures on top of said tortilla. Tacos mainly originated from the central to South American cultures who are mainly Spanish speaker. One of the common things about these dishes is how “white washed” the USA has made them. The term means watered down or bootlegged from the original foreign taste.
The next dish that I enjoy rather well is called Pozole is from Mexico when the Spanish had began to conquer it. The dish starts off with a stew of dry corn you can say for them it was only for special occasions for like rituals, marriages, and even funerals. The meal is topped off with a meat and it can be any meat and a type of sauce to give it more flavors. I love this dish for the simple fact that taste so amazing for those cold nights and even for the warm ones it is just awesome! Camarones a la diabla are shrimp just completely drizzled in hot sauce or any other sauce to give it that needed kick to catapult it to the next level. This is beyond and far away my favorite dish just because, once the flavor kicks in you feel like your taste buds is going into high gear! The dish originated in Central or South America and was used as a potent way to kick a hangover. I cannot end this without putting a drink on my list. This drink is called champorado. It is a chocolate pudding type of drink for me and how my mom makes it hot which you can enjoy with hot bread. The basics how to make is that you need to include masa so it can get a solid yet, liquidly form. Champorado is from Mexico and is usually served in a foam cup during, festive holidays it is a lot like Pozole and is best served with tamales.
